  • Juice of 1 lemon

  • 2 tsp dried oregano
  • Handful fresh thyme
  • 1/2 tsp sweet paprika powder
  • 1/2 tsp cumin
  • 2 tsp salt

Instructions

  • In a large mixing bowl, combine the lamb chunks with 4 tablespoons of extra virgin olive oil.

  • Crush and mince the garlic cloves and add them to the bowl.

  • Squeeze the juice of 1 lemon over the lamb.

  • Sprinkle 2 teaspoons of dried oregano, ensuring even distribution.

  • Add a handful of fresh thyme to the mix.

  • Include 1/2 teaspoon of sweet paprika powder and 1/2 teaspoon of cumin.

  • Finally, add 2 teaspoons of salt to the bowl.

  • Thoroughly mix all the ingredients in the bowl, ensuring the lamb pieces are evenly coated with the marinade.

  • Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 2 hours, allowing the flavors to infuse into the meat.

  • After marinating, take the lamb out of the refrigerator.

  • Preheat your grill or barbecue to medium-high heat.

  • While the grill is heating, chop the red onion into chunks for skewering.

  • Skewer the marinated lamb and red onion chunks alternately onto metal or soaked wooden skewers.
