Jamaican Jamaican co*cktail Patties Recipe

INGREDIENTS

The Dough

  • 1\4 cup shortening
  • 1\4 cup margarine
  • 1\3 cup water (cold)
  • 1\4 teaspoon salt
  • 1\2 teaspoons curry powder
  • 2 cups flour

The Filling

  • 2 tablespoons margarine
  • 3\4 pound ground beef
  • 1 small onion, finely diced
  • 1 teaspoon curry powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1\2 cup beef broth (stock)
  • 1\2 cup dry bread crumbs
  • 1 beaten egg

PROCEDURE

The Dough

  1. Preheat oven to 200 degrees C (400 degrees Fahrenheit).
  2. In a large bowl, combine flour, curry powder and salt.
  3. Cut in margarine and shortening until the mixture looks crumbly.
  4. Add water and stir until the mixture forms a ball.
  5. Shape the dough into a log and cover it with a damp cloth until ready to use.

The Filling

  1. Melt margarine in a skillet over medium heat.
  2. Saute onion until limp and translucent.
  3. Add the beef, salt, pepper, curry powder and thyme and mix well.
  4. Cook until the beef is evenly brown, stirring constantly.
  5. Add the breadcrumbs and stock and combine all the ingredients well.
  6. Simmer until liquid is absorbed. It should be moist but not watery
  7. Remove the skillet from the stove and preheat the oven to 400 degrees.

How to make the patties

  1. Uncover the dough logs and place a tablespoon of filling 2 inches apart on each.
  2. Moisten the edges of the dough with water and fold the log in two, covering the filling.
  3. Use your hands to close the air pockets, then slice your log into individual patties.
  4. Slice the excess dough from the patty.
  5. Crimp the edges of each patty with a fork to seal it and also to achieve the traditional patty look.
  6. Lightly brush the pastry with the beaten egg.
  7. Place your patties on a lightly greased baking sheet and poke tiny air holes on the side facing up.
  8. Bake in the oven for 30 to 35 minutes at 350 degrees or until the pastry is golden brown.
  9. Remove your patties and serve hot.
